Pili’s Party Taco

Pili's Party Taco is a food truck selling Mexican street food, including tacos, burritos and quesadillas. It opened in Bloomington in 2017 with recipes from Puebla, the hometown of owner and founder Maria 'Pili' Del Pilar Gonzalez. In early 2020 she also opened a Mexican store. The business says it now runs three trucks.

The Bloomington truck parks on the square at 109 S Walnut Street. The menu has tacos on double corn tortillas, gringas, tortas and esquites, with meats such as al pastor and birria. The site advertises a weekly Taco Tuesday special of four tacos and a side of rice. The truck lists hours of Monday to Wednesday 11am to 11pm and Thursday to Saturday 11am to late, though hours may change. Pili's also offers catering with the truck or a taco salad bar, and has a second location in Bedford.
